If for example I buy a male Snorlax and another female Snorlax and do the breeding, will the Munclax come out as if I had captured it in the Pokédex?

After breeding, Under OT in the Pokemon Summary it will say 

 

OT: Iacey*

for example.

the (*) explains that as the pokemon was breeded it is not registered to the Pokedex as Caught OT, unless you are breeding two pokemon you own.

Exactly what Lacey said. Also don't forget that the munchlax will be in a blue box which is the Owned, not caught. So I suggest you to go to Cerulean cave and catch a Snorlax, and breed it with a Ditto
